Raw Vegan Coconut Carrot Cake Energy Bites





Having an easy, quick, and portable snack food is a dire necessity for anyone. Energy bites have been all the rage recently. Surely you Pinterest frequenters have taken notice. With limited safe foods, one of my main concerns was maintaining a healthy diet without depriving my sweet tooth. And that is when the delectable Carrot Cake Energy Bites were born! With this snack, you also get some fresh vegetables in. It cannot get better than that!
Ingredients:
  • 2 Carrots
  • 3/4 C Oats
  • 10 to 12 Dates 
  • 1/4 Cup Raisins
  • 1 TBSP Chia Seeds
  • Cinnamon
  • Nutmeg
  • Vanilla Bean
  • 1 TBSP Water or Plant-Based Milk 
  • 1/4 Cup Shredded Coconut

For the dates, I used a combination of Medjool and Khadrawy. Khadrawy dates are on the smaller size spectrum. If using all Medjool, I recommend only adding in about 8 dates, depending on how sweet you want your energy bites. Add the spices and vanilla to taste, if tolerated. 

Instructions:
  1. In a high-speed blender or food processor, combine all ingredients. 
  2. Process until desired consistency. I prefer them smoother; however, for a chunkier texture do not process as long. 
  3. Remove from blender or food processor. Roll into bite sized balls. 
  4. Coat the outside of the energy bites in additional chia seeds, coconut, or any of your other favorite superfoods. 
  5. Allow energy bites to set in the fridge for 1 to 2 hours. 
  6. Enjoy! 
Store any leftovers in the fridge to keep them fresh. However, they do not last long around my house!
