Banana Bliss Vegan Muffin & Pancake Recipe


Vegan treats are difficult for anybody to resist, but healthy vegan treats are even more so. When I was able to consume substances known as food, these two recipes served as easy snacks or breakfasts. Even my non-vegan family members enjoy these recipes. 

Ingredients for Vegan Banana Bliss Muffins:
  • 3 Cups of Oats
  • 3 Bananas
  • 1 Cup Almond Milk 
  • 1 TBSP Pure Maple Syrup or Agave Nectar 
  • 2 Flax Eggs 
  • Cinnamon
  • Vanilla Bean

For the oats, I use Bob's Red Mill brand in the gluten free option. Any plant-based milk can be substituted for the almond milk. I also enjoy hemp or coconut milk for this recipe. Cinnamon and vanilla bean are to taste, as I am sensitive to both and can only add dashes of each. 


Flax Egg Instructions:

If you are unfamiliar with vegan baking, flax seeds can be used to replace the sticky consistency of eggs to ensure a recipe holds together. 

  1. Per egg, combine 1 TBSP of ground flax with 3 TBSP of water. 
  2. Stir and place in the fridge. 
  3. Remove from fridge after 15 minutes and use. 
Baking Instructions for Vegan Banana Bliss Muffins:
  1. In a high-speed blender, combine 2 cups of the oats, 2 1/2 bananas, 1 cup plant-based milk, 1 TBSP of syrup or agave, both flax eggs, and cinnamon and vanilla to taste. 
  2. Blend until batter is smooth. 
  3. Stir in the remaining cup of oats to obtain a chunkier consistency, if preferred. 
  4. Fill muffin pan with liners and pour in batter. 
  5. Pre-set oven to 350 degrees F. 
  6. Bake about 10 minutes. 
  7. After 10 minutes, remove muffins from oven and use the remaining 1/2 of the unused banana to place on top. 
  8. Return muffins to oven and bake for another 15 to 20 minutes. 
  9. Enjoy! The recipe yields about 6 muffins, depending on how far you fill the muffin tins. I tend to be generous. 

Ingredients for Vegan Banana Bliss Pancakes:

  • 3 Cups of Oats
  • 3 Bananas
  • 1 Cup Almond Milk
  • 1 TBSP Pure Maple Syrup or Agave Nectar
  • 2 Flax Eggs
  • Cinnamon
  • Vanilla OR if you prefer a more chocolatey taste: 1 TSBP Cacao/Carob Powder
  • If desired: berries, other fruits, or chocolate chips


The same substitutions regarding brands or milk still apply. The flax egg instructions also still apply. 

Instructions for Vegan Banana Bliss Pancakes:

  1. In a high-speed blender, combine ALL ingredients EXCEPT berries or chocolate chips.  
  2. Blend until batter is smooth. 
  3. Stir in the berries or chocolate chips. 
  4. Using a non-stick pan over medium-high heat, pour batter onto pan.
  5. Allow pancakes to cook until they begin to bubble and then flip. 
  6. Top with maple syrup, fruit, or vegan frosting. In the image, I topped mine with a raw, vegan cashew frosting by FullyRawKristina. 



I am definitely your average vegan. Nor am I your average food blogger. I think that s obvious by my mediocre food photography.

Due to dietary limitations, the majority of recipes that I trialled had to be majorly altered. These two recipes were relatively "safe" for me, with little substitutions, and loved by friends and family. I hope somebody finds this helpful.
